time to make a tagine!
a tagine is a dish served and made in a tagine pot, it is popular in morocco and can be easily made by you!
ingredients:
(any kind of vegetable but this is my fav combo)

- onion
- tomatoes
- zucchini
- carrot
- green beans
- potatoes

- garlic
- curcuma
- (smoked) paprika powder
- chili powder
- chopped parsley
- cumin
- salt
- pepper
- olive oil
1) start by preparing a 'sauce' that will give the whole dish flavor. chop up some garlic and parsley, throw those + a big spoon of all the spices together in a bowl, add a spoonful of olive oil and add a glass of water. stir it to mix
2) chop up the onion and tomato in small pieces, chop the rest of the vegetables in thick long sticks.
3) put some olive oil in the tagine pot and turn the heat on medium heat. add the onions and after a few minutes the tomatoes.
once you have added the tomatoes, also add a little bit. of the sauce and stir it for 7-10 mins
4) start by layering all the chopped vegetables towards the center, i also like to place a piece of unchopped vegetable in the center, such as cauliflower, aubergine or potato. (some meat or fish can also be added)

use the vegetables that need the longest (potato/carrot) to cook on the lower part of the tower and the vegetables that need the shortest (small parts/ green beans) on the top
5) while layering, add the sauce bit by bit. when everything is finished put the lid on the tagine pot and let it stand for 30-60 minutes, whatever you prefer
serve with some bread and enjoy!
you can really use any kind of vegetable/ meat/ fish, experiment! go wild!
